In order to create this unique bourbon, the finest barrels are selected and tasted from the best aging warehouses. Only those barrels deemed exceptional are then bottled individually, one by one. This preserves the distinct character of each barrel.

1792 Single Barrel Kentucky Straight Bourbon Whiskey is made from a mash of 75% corn, 15% rye, and 10% barley. While the use of corn in the bourbon's recipe adds classic notes of butterscotch and roasted nuts, the heavy use of rye in the bourbon mash bill yields a more complex and full-bodied whiskey. After the grains are harvested, they are mashed and fermented before being distilled through a copper-pot still.

Ripe fruit (peach, apricot, golden raisin) on the front of the palate, followed by layered sweet notes of caramel, butterscotch, and toffee, finishing with oak, dried vanilla, and a hint of cinnamon. Great mouthfeel. Each barrel is unique in its flavor profile. There's no barrel number identified on the label, so the one you buy may vary slightly. Having said this, the barrel I reviewed was very enjoyable.

COLOR

Deep colour, almost opaque.

NOSE

Aroma of excellent complexity, with wild bush and spicy notes like curry, pepper and ginger, red berries and black fruits mixed with a light cacao touch, the result of a good maturation, along with a slightly stony finish.

PALATE

On the palate it has a powerful attack, with a lively acidity, firm and well present tannins, wild bush and red berry notes, with an extremely long finish and great concentration.
