Shibuis only bottling from Kumesen Distillery is single distilled in a stainless steel still and matured in manzanilla and fino casks. More oakiness on the nose, with milk chocolate, dried cranberry, slightly bitter cherry notes, hints of toffee, and muted wood spices. Citrus freshness, vanilla fudge, gingersnap spiciness, licorice, walnut, and fresh fig, with a finish of lime and green melon, imply the influence of the lighter-style sherries.

Shibui whiskies are crafted in multiple award-winning distilleries from two different regions of Japan, making their range of whiskies truly unique. Shibui World Blends showcase the art of Niigata Master Blenders who create exquisite marriages of flavor using multi-cask maturation. Shibui Single Grain whiskies are a reflection of the Japanese distilleries in Okinawa who distill the grains of the land and make whisky unlike any other. Trailblazers in transparency, Shibui wants consumers to knowÁ‚ exactly what is in the glass. Shibui shares details about their distilleries, grains, blends, fermentation, distillation and maturation, as well as the fact that all Shibui whiskies are 100% natural in color and non-chill filtered.

SCENT & FLAVOR

COLOR

Deep colour, almost opaque.

NOSE

Aroma of excellent complexity, with wild bush and spicy notes like curry, pepper and ginger, red berries and black fruits mixed with a light cacao touch, the result of a good maturation, along with a slightly stony finish.

PALATE

On the palate it has a powerful attack, with a lively acidity, firm and well present tannins, wild bush and red berry notes, with an extremely long finish and great concentration.

“Thanks to the characteristics and potential of the vineyards at Quinta do Seixo, it was possible to cut through the strong maturations of this year's harvest. As a result, we produced very balanced and robust wines, with aromatic notes typical of more mature years.” - Luís Sottomayor, head of Sogrape's winemaking
