Poema carefully observes the Cava DO's stringent regulations to craft its top-quality, small-production Cavas, which are made using the same traditional method used in Champagne. The grapes are grown in the limestone hills surrounding Barcelona on vines that are a minimum of 20 years old. A green harvest and careful selection help to ensure that only ripe, pristine grapes are picked. Grapes are harvested manually and pressed in three different wineries close to the vineyards before each lot is fermented separately. With 55% of the must free-run juice, the grapes are fermented in stainless steel tanks, then the lots are blended and second fermentation takes place in the bottle according to Metodo Tradicional. Poema carefully follows the Cava DO's stringent regulations and elaborate Champenoise method to craft its Brut, delicately sweet Extra Dry and vibrant Rosado, three exquisite expressions of Cava.PENEDES VINEYARDWhile Cava may be produced in various Spanish regions, Poema grows and sources its white grapes in Penede8s, immediately west of Barcelona and considered the finest growing region for the grapes used to make Cava. Its red grapes for rosado are grown in Conca de Barbere1, to the west.

COLOR
Deep colour, almost opaque.
NOSE
Aroma of excellent complexity, with wild bush and spicy notes like curry, pepper and ginger, red berries and black fruits mixed with a light cacao touch, the result of a good maturation, along with a slightly stony finish.
PALATE
On the palate it has a powerful attack, with a lively acidity, firm and well present tannins, wild bush and red berry notes, with an extremely long finish and great concentration.
